I do have a bunch of dough left over, and am debating if I should make more pop tarts, or if I should make a cinnamon apple roll up. Decisions, decisions. ;)

Homemade Pop Tarts
I've never been the biggest fan of pop-tarts, but when I saw this recipe on Pinterest, I knew I had to try it out.
So yummy!! I made these in three flavors; chocolate (melted milk chocolate chips), strawberry (no sugar added strawberry preserves), and apple cinnamon (apples tossed with brown sugar and cinnamon). All of them were amazing! The pastry was absolutely phenomenal, I found myself eating it plain (gasp!). ALthough the picture doesn't show it, I did top the pop tarts with icing (which I ran out of). I was afraid that the chocolate ones would be a bit too sweet with the icing, but it wasn't at all. They actually reminded me of the chocolate croissants that they used to sell at Panera (*faves*).

HG: Sweet n Sticky Sesame Chicken
One of my all time favorite foods is sesame chicken from the Chinese take-out place down the road (well, really just any sesame chicken, but I digress). I know its horrible for you, but I just can't help myself. So when Hungry Girl made a sesame chicken recipe, I was all for it. I've been wanting to make this for a while, but only got around to it he other night.
This recipe actually reminded me more of honey/orange chicken than sesame chicken, but it was still very good. My mom and I did make some alterations to the recipe. We omitted the sesame oil, and added a bit of Splenda brown sugar to add a bit more sweetness. I don't think that this will completely take the place of take-out, but it is a recipe that I will make again.

Homemade Cheese-Its
I found this recipe on Pinterest the other day, and decided that it was definitely something that I needed to try.
These came out so good! Some of them ended up a bit thick (because rolling out warm dough is a pain), but they still taste just as good.
These were ridiculously easy to make - just a few ingredients - and they taste exactly like store-bought. I did make some small changes to the recipe. I used salted butter, since I didn't have unsalted, and used half the salt. They ended up a bit salty, but I like salty so it's ok. ;)

The Crab Rangoonies
I made these on a whim the other day when I discovered a package of imitation crab meat in the freezer.
I did half the amount of scallions in the recipe, and there seemed to be more than enough, for me. They tasted exactly like the rangoons that I get at the buffet; sooo good. My mom did whip up a hoisin and soy sauce dip for them which went perfectly. These are definitely on the "to be made again" list.

Four Cheese Stuffed-Silly Mushrooms
Another new recipe tonight. The recipe I used was in the Hungry Girl 200 Under 200 cookbook, but another version of the recipe can be found here.
I love stuffed mushrooms but, since the recipe we used was basically breadcrumbs and butter, I thought I wouldn't be able to have them anymore. Needless to say, I was excited when I found this recipe. I ended up doubling the recipe to make 12 mushrooms for my mom and I.
I really like this recipe. I felt that it could have used a bit more garlic, but other than that it was very tasty. I did end up with a ton of extra filling, almost a couple cups worth. I ended up just forming loose balls with it, and putting them on the baking sheet as well. They turned out just fine, although most of them fell apart.

HG: Nacho-Riffic Stuffed Chicken
I've been getting really bored with what I've been having for dinner, so I decided to try something new. I saw this recipe for stuffed chicken on HG's show and knew I had to try it.
(Please to be ignoring the stuff on the left, it's the filling that fell out during baking). This stuff is sooo good! The filling was gooey and cheesey, the chicken was cooked perfectly, and the topping was crunchy and had a bite to it. This is definitely one that I'll have to make again.

Big Fat Blueberry Muffins
Blueberry muffins are a total weakness for me. Luckily, HG has an awesome recipe for low fat, blueberry packed, muffins.
I love these muffins. They taste amazing; sweet, but not too sweet. And they are jam-packed with blueberries. Yum!
