I did half the amount of scallions in the recipe, and there seemed to be more than enough, for me. They tasted exactly like the rangoons that I get at the buffet; sooo good. My mom did whip up a hoisin and soy sauce dip for them which went perfectly. These are definitely on the "to be made again" list.

The Crab Rangoonies
I made these on a whim the other day when I discovered a package of imitation crab meat in the freezer.

Four Cheese Stuffed-Silly Mushrooms
Another new recipe tonight. The recipe I used was in the Hungry Girl 200 Under 200 cookbook, but another version of the recipe can be found here.

I love stuffed mushrooms but, since the recipe we used was basically breadcrumbs and butter, I thought I wouldn't be able to have them anymore. Needless to say, I was excited when I found this recipe. I ended up doubling the recipe to make 12 mushrooms for my mom and I.
I really like this recipe. I felt that it could have used a bit more garlic, but other than that it was very tasty. I did end up with a ton of extra filling, almost a couple cups worth. I ended up just forming loose balls with it, and putting them on the baking sheet as well. They turned out just fine, although most of them fell apart.

Super Bowl Sunday, Pt. 2
And the other HG recipe that I made for the big game was her Saucy Chick BBQ Nachos which can be found here, on her website.
I did make some changes this time. I mixed the entire half cup of bbq sauce in with the chicken since drizzling it on top can get gloopy. I also didn't put scallions or sour cream on top because I don't think it needs it, and its amazing as it is.
Super Bowl Sunday, Pt. 1
My friend came over for the big game and she, my mom, and I made a whole bunch of snacky stuff to eat while watching. I'm only going to post 2, but my mom also made reduced-fat pigs in a blanket (fat free hotdogs wrapped in reduced fat cressant rolls and thinly sliced), and Sam brought some chocolate marshmallow cupcakes, shrimp cocktail, and carob fudge. This post is for HG's Rockin Resturant Spinach Dip from her first cookbook.
I made a double batch of this because it is just that amazing. There used to be a resturant around where I live called Bugaboo Steakhouse, and this dip is just like the one that they served. This is the perfect combination of spinach, cheese, garlic, and onion. Yum!
