Apple Pie Oatmeal Bonanza
This recipe was taken from Hungry Girl's 300 Under 300 cookbook. I made it for breakfast a few days ago, and it was really good.
I did have to add some more Equal, since I have an insane sweet tooth, and I poured a little more sugar-free syrup on top to make it pretty ;) This recipe made an absolutely HUGE bowl of oatmeal. Overall, it was a good recipe. It kind of reminded me of the Apple Cinnamon Oatmeal I made before, but just a bit different.

Too-EZ Mac 'n Cheese
My friend saw this recipe on Hungry Girl's cooking show, and we decided to try it out the other day.
Broccoli + pasta + cheese = OMG GOOD!!! We halved the recipe, except for the Laughing Cow, and added some parm topping at the end. So yummy. Its really filling too.

Filet Mignon with Garlic Cream Sauce
Getting fancy over here today! This was made by my mom (I helped making the sauce), since I am incapable of cooking meat. She used a recipe from the Weight Watcher's 5 Ingredient Cookbook.
The serving is actually quite large (for 6 points), I was just using a giant plate. This was sooo good. I don't eat red meat very often, so this was a treat. The cream sauce was soo garlic-y and yummy. Asparagus was the perfect side, too.
Peachy Maple-Caramel Crunch Parfait
I made this parfait for breakfast today. Its from Hungry Girl's 200 Under 200 cookbook.
This could, quite possibly, be the ugliest thing I've ever made. After adding the syrup, the yogurt was too thin to make nice defined layers. But this tastes amazing. And its really filling. I could only finish half of it.

Apple Cinnamon Oatmeal
I've been on an oatmeal kick lately, I just can't get enough! I was getting tired of the maple brown sugar oatmeal, so I created my own apple cinnamon oatmeal this morning. It makes a huge bowl of oatmeal, which is 5 points, and completely filling.

Again, why does oatmeal have to be so ugly and unphotogenic? Anyway, here's the recipe
- 1/2 cup oats
- 1 cup water
- dash salt
- 1/2 tsp cinnamon
- 1 small apple, cut into bite-sized chunks
- 2 tsp splenda brown sugar
- Optional: additional equal packets
Mix together oats, salt, cinnamon, and water in a medium bowl. Microwave for 1 1/2 minutes. Mix. Return to the microwave for 1 minute. Stir in brown sugar and apples. Add additional equal if needed.

Maple Brown Sugar Oatmeal
I was craving oatmeal like crazy after my workout today, but I didn't want to waste points on something that wouldn't fill me, or would use too many points. A google search later, I found this recipe and decided to try it out.
Sorry for the not-so-pretty pic, but its hard to get a nice picture of oatmeal. I decided to nix the raisins/craisins, and used splenda brown sugar and sugar-free pancake syrup. All together, this huge bowl is around 4 points. Not bad at all. It turned out really nice. I did have to add a packet of equal since it wasn't sweet enough for my crazy sweet tooth, but other than that its awesome. I'm so used to the over processed instant oatmeal that this is a nice change.

Super Bowl Sunday, Pt. 2
And the other HG recipe that I made for the big game was her Saucy Chick BBQ Nachos which can be found here, on her website.
I did make some changes this time. I mixed the entire half cup of bbq sauce in with the chicken since drizzling it on top can get gloopy. I also didn't put scallions or sour cream on top because I don't think it needs it, and its amazing as it is.
